This wine will continue to improve with bottle maturation. Sparkling wines mature somewhat slower than table wines, but can become magnificently complex and elegant. The wine has wonderful potential to do just that. It will be brilliant in 2010!
The wine has seen prolonged oak maturation - nearly 28 months. We believe that the base wine must be fully complex and developed before it goes into bottle for it to reach its full potential. This wine saw predominantly French oak which had been used at least once before.
