Wisanger Hills Cabernet Sauvignon 2004 

Cape d'Estaing is 3km from the North Coast on Kangaroo Island. The owners believe that low yields produce the best wines and carefully slow the growth of the vine between flowering/fruit set and veraison to produce desirably small berries with very high skin area to juice ratio.

Colour Deep dark red - quite dense and attractive - promising a full, rich wine.
 
 
Nose Lifted, leafy, berried, ripe Cabernet aromas are complemented by gentle spice and vanillin oak.
 
 
Palate Medium-full bodied, plenty of flavour in middle palate. Flavours ripe with berries and cassis, and with a pleasant vanillin/spice component from the oak. Elegant with impressive length. Tannins grainy and full but softening, giving a lean dry finish.
 
 
Potential This is a wine which drinks very nicely now, and it continues to get rounder and softer with time in bottle. Flavour, body and tannin structure all indicate that the wine will improve till at least 2007 and live on much longer.
